Chef Saransh Goila is India’s youngest celebrity chef. His specialty is contemporary Indian food, and he’s on a quest to spread his love for spices around the world. His online series, “The Spice Traveller,” sends him around the globe to learn about new cultures and cuisines while sharing Indian cooking techniques.
His most recent travels brought him to Mauritius where he stayed at Outrigger Mauritius Beach Resort. During his visit, Chef Saransh experienced the flavors of the island including passion fruit and pineapple pickles. He also had an outdoor cookout with the resort’s Executive Sous-Chef, Sundaravelan Sadien. Chef Sadien shared his knowledge of the local cuisine by mixing Mauritian, Indian and French influences. Together the chefs prepared a seabass and sea urchin ceviche with fresh coconut, pineapple and lemon caviar.
